Eurocryor technology meets the taste of Wallonia, in the historical Braham butcher's shop which, founded in 1948 in Bèfve, in Belgium, continues its path of innovation. An evolution made possible by the best Epta refrigeration solutions designed to enhance the offer of highly renowned meat and gastronomic specialties of the area.

Born from the intuition of René Braham after the Second World War, the family business has experienced countless successful seasons: from door-to-door meat sales, together with a more traditional shop format, with a structured catering service set up by the son Vincent in 1988 and until the purchase of the nearby grocery store, to integrate dairy products, fruit and vegetables and bread among the products on sale.

​Braham's typical passion also involves the third generation, namely the young Delphine who received the prestigious Le Couteau d'Or award in 2017, distinguishing herself as the most talented apprentice butcher of Belgium.

 

BISTROT, THE VIBRANT SOUL OF THE SHOP RESTYLING PROJECT

The installation of the Bistrot refrigerated cabinet of the Eurocryor Stili family, technology which is the flower in the buttonhole of the new butcher shop, is the vibrant soul of the restyling project of the entire store, revolutionised in the layout of the furnishings and design.

The serve-over cabinet, used by an average of 250/300 customers a day according to the most recent estimates, features extra-clear glass, which reduces the reflection and maximises food visibility, for great attractiveness, also provided by the LED lighting with four shades of colour temperatures, calibrated according to the product category on display.

Customised entirely in the side panels for a thickness of 1 mm and in the position of the electrical sockets, the model merges optimised performance and energy efficiency, thanks to the use of quality materials and an advanced refrigeration system.

Bistrot, intended not only for meat but also the most varied preparations, features the Adaptive System, an adaptive management of refrigeration which regulates the function of the refrigerated cabinet adapting itself to the external conditions, ensuring maximum freshness and food safety. Furthermore, the system is combined with a configuration of the cabinet designed to maintain an elevated level of Relative Humidity, crucial to reduce the weight loss and preserve the intrinsic properties of the foods.
